Salmon Chowder

An absolutely delicious and cozy meal, great for using leftover fish. You can use fish other than salmon if you wish.
Ingredients
2 tbsp olive oil
2 tbsp butter
4 strips bacon, chopped
2 shallots, finely diced
1-2 tbsp finely minced garlic; 2-4 cloves garlic
2 tbsp arrowroot powder
2 tbsp water
3 cups chicken stock
12 oz salmon, raw and skinned
~2 cups peeled and chopped root veggies*
2 cups half-and-half or heavy cream
Salt & pepper* to taste
Instructions
Heat the butter & olive oil in a large saucepan on medium high heat.
Add the bacon until crisp.
Add in the onion & garlic for 2-3 minutes.
In a small bowl, mix the arrowroot powder with the water until you get a paste, then add that to the pot and whisk it in for about 2 minutes.
Mix in the stock & veggies & bring it to a light boil.
Reduce heat.
Add the salmon & allow to simmer for 15 minutes or until cooked through.
Stir in the heavy cream & let simmer for 3 minutes.
Taste & add salt & pepper to taste.
*Ingredient Discussion
PEPPER: Pepper can be potentially inflammatory or higher in nickel.
ROOT VEGGIES: Depending on where you are in your detox. If you are beginning, use more squash, parsnips, and carrots. Later try some sweet potato or white potato.
